In keeping with my current obsession with All Things French, last night's Meatless Monday dinner took a decidedly Provencal turn... a simple tart filled with caramelized onions, kalamata olives, and tomatoes, topped at the end with crumbles of soft fresh goat cheese. Served with a salad of tossed mesclun and heirloom tomatoes, it was a delicious light meal.
